For the month of May I've set myself a vegetarian challenge and in the midst of exploring this suprisingly unrestrictive food restriction, very odd food preferences have arisen in my diet.
1. Mature Cheddar and Pickle. For those Americans out there, pickle or Branston Pickle is essentially various veggies pickled with vinegar and spices. It's better than any other non-meat including sandwich ;)
2. Veggie ramen soup: veggie broth and miscellaneous veggies, lightly stir-fried with red-pepper flakes and rice noodles! mmmmm
3. Warm rice/couscous salads: grilled mediteranean veggies, spinach, baked beans, cottage cheese, various crunchy veggies (celery, etc), and sometimes ranch... OMG so good!
4. Crunchies with hummous: carrots, radishes, celery, cucumber, mangtout
I've learned that it's really important to have protein with your meals. This is usually the meat we have, but protein comes in a lot of different forms like cheese, beans, etc. In all reality, I'm really glad I set this challenge for myself. I'm not really missing meat so much to be honest!
