The New Vegetarian is not really

For the month of May I took part in a personal challenge--to eat vegetarian. I tried not to put too much pressure on myself. If I went out and nothing was available except something with fish, I didn't feel terribly guilty, but except for a conference and some prawn mayo sandwiches, this did not happen.

I prepared myself by gathering recipes and advice from my veggie friends and wandering through markets and thinking about creative things I could do with vegetables: different combinations, different flavors other than chicken oxo that I could add, etc.

To be honest it was fun.

I got in touch with some interesting types of cheese--mozzarella being a new personal favorite, and exploring with tofu and different types of beans (proteins).

What I found after a month is that I really like eating vegetarian. I didn't really miss meat and I found flavorful, healthy ways to eat and to really enjoy my food. I shed a few pounds, and felt like I toned up a bit from not consuming so much animal based fats (except in my dairy foods).

I even considered staying veggie, at least when I'm not out. I only missed meat when I was at restaurants... so we shall see how this continues. :)
